CHEMEX Pour-Over Instructions
We recommend starting with a 1:15 coffee-to-water ratio when brewing pour over coffee. So for every 1 gram of coffee, add 15 grams of water. (1L of water, weighs 1000g, so 15ml for every gram of coffee)
We suggest you use a ratio of 60-65g & 1L of water. The coffee should be ground to a medium coarseness, which we can do for you in-house or can be done at home using a grinder (We highly recommend using a conical burr grinder, made for coffee, rather than a blade-style grinder, such as ourTimemore Chestnut C2 Hand Grinder)
For the baste taste results, we recommend using filtered water. Boil the water and wait 1 minute to let the water cool to approximately 95C (Unless you have the ability to set your temperature on your kettle). Place the CHEMEX Filter Papers into the CHEMEX, and pour some water over the filter paper to rinse away any paper taste and warm the CHEMEX. Once soaked through, discard any water that has fallen though into the base.
If you are using scales, such as ourTimemore Black Mirror, place the pour over onto the scales and reset the weight. Add the coffee grounds, ensuring they are evenly spread, then pour half the required water over the grounds using a circular motion, avoiding the edges where the grounds meet the paper.
Gently stir the coffee within the filter in before adding the remaining water required in the same circular motion, using theTimemore Black Mirror to monitor the weight. Stir once more then allow the coffee to brew for approximately 3 and a half minutes. (You can use the timer on the Timemore Black Mirror here)
